And Now for Dessert!

All this peanut butter and chocolate talk got me hungry, so the other night after our date, as all fabulous dates should end, dessert beckoned and we wound up at the store. Into the cart jumped these decadent essentials, and back home, I let our oldest stay up late for a special post-date dessert-making sesh.

You’re in for a treat. This peanut butter dessert is easy peasy and even more fun to make with a cute assistant dessert helper at your side :)

No Bake Peanut Bar Bites/Bars

Ingredients:

1/2 cup butter, softened

2 cups creamy peanut butter {splurge on the good, natural kind}

2 cups confectioners’ sugar

3 cups crispy rice cereal

1 cup semisweet chocolate chips

In the microwave, or over a double broiler, melt the chocolate chips and stir until smooth.

Note: we did not double-broil this bad boy. Nuke for 30 seconds, stir, nuke another 30 seconds for perfect chocolate melted-ness.

In a medium bowl combine softened butter, peanut butter, and confectioners’ sugar. Blend with a hand mixer or spoon until smooth.

Be sure to sample the crispy rice cereal to ensure they snap!crackle!pop!

Add the cereal to the peanut butter mixture and stir.

This recipe calls for peanut butter bars, but bite-size nibbles sound way better. Lining a round plate with wax paper, we got to work!

Spoon a small amount of peanut butter mixture into a ball and top with a generous dollop of melted chocolate {butterscotch would be delish too}

Place bites on the wax paper and, as with mushrooms, don’t crowd ’em!

Resist the urge to shovel every pb bite in your pie-hole and instead, open the fridge, throw ’em in, and shut it quickly!

And instead, scrape every. last. blasted. drop. of chocolate from the bowl! Spoons are optional.

With leftovers, we made one small pan of bars and let them sleep in the fridge overnight. To a friend’s they went the following day!

Conclusion? These peanut butter bites are habit-forming. Currently, I’m licking the chocolate goodness, while impatiently holding another ball, and writing with my right hand. Yep, that good!

Displayed on a tiered round or rectangular platter, this sweet treat makes for a fun presentation at parties, showers, or with late-night company.
